10 - 15 minutes
4 chicken breasts, cut into 1 inch cubes
1 tbsp olive oil
1 tbsp Mrs Dash chipotle seasoning (use a bit less if you don't want it too spicy)
2 - 3 cloves garlic (depending on taste)
2 tsp lemon juice
1. Combine all ingredients in a medium sized mixing bowl, and ensure that chicken is thoroughly coated.
2. Poke small holes in chicken with a fork so that marinade can permeate through the flesh.
3. Heat skillet and add a small amount of cooking oil (I use olive oil).
4. Cook chicken until completely done (approximately 5 minutes on each side). Chicken is done when you've cut through the largest piece and there is NO pink in the flesh. It should be opaque and fibrous.
Although these can be prepared and cooked right away, you can also choose to let the chicken marinate in the refrigerator for up to 6 hours. The bites can be eaten on their own as an appetizer, or added to a salad (it goes great with spinach and avocado!).
