Creamy Mashed Sweet Potatoes

4-5 large sweet potatoes, cubed
3 Tbsp coconut oil
1.5 Tbsp maple syrup
1/2 Tsp ground cinnamon
Salt and pepper, to taste


1. Boil the sweet potatoes until tender, about 20 minutes

2. Drain and rinse the sweet potatoes, then transfer them back to the pot

3. Add remaining ingredients and mash with a potato masher or fork

Serve immediately.



I left the skins on the sweet potatoes, as I prefer the texture. Feel free to peel them before boiling if you'd like a creamier consistency.
