Gluten free, lactose free Waffles (with Coconut Whipped Cream!)

4 waffles


For the waffles:

1 cup coconut flour
1 tsp baking powder
1/4 tsp baking soda
pinch of salt
1/2 tbsp coconut oil (liquid)
3/4 cup coconut or almond milk
2 eggs
1/2 tsp vanilla extract

For the coconut whipped cream:

2 cans coconut milk or cream (refrigerate overnight)

1/2 tbsp icing sugar (optional)


For the waffles:

1. Pre-heat waffle iron.

2. In a large bowl, combine dry ingredients.

3. In a medium bowl, combine wet ingredients.

4. Add wet ingredients to dry bowl, and stir until a batter is formed. You may have to play with the proportions a bit to get it to how you like it!

5. Brush waffle iron with coconut oil. Cook according to directions, about 3 minutes per side.

For the coconut whipped cream:

1. Scoop the solid, creamy part out of the top of the cans, and combine in a medium sized mixing bowl.

2. Beat until it looks like whipped cream. It's really that easy!

3. Add icing sugar, if desired.

Serve with fresh berries and maple syrup. Enjoy!
