Scrambled Eggs with Sautéed Veggies

1 serving


2 eggs
1/2 avocado
1 clove garlic, crushed
A handful each of chopped:

- onion
- tomato
- spinach
- crimini mushroom


Over medium heat, sauté all veggies together in a little bit of olive oil. Add crushed garlic, and cook until veggies are soft (or however you like them). Add salt and pepper to taste.

Once cooked, transfer to a plate. Scramble the two eggs and add to plate. 

Eat with half an avocado on the side. I often add a bit of sea salt and lime to my avocado.
