Southwest Vegan Bowl

Ingredients

  • 1 cup quinoa (dry)
  • 1 chopped tomato (half inch chunks)
  • 1/3 cucumber, chopped
  • handful spinach or other salad greens
  • 2 tbsp canned corn
  • 2 tbsp canned black beans
  • half an avocado

Seasoning:

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp chili flakes
  • salt and pepper to taste

Directions

1. Cook the quinoa. Place 1 cup dry quinoa in a pot and add 2 cups water. Bring to a boil, then turn to low and allow to sit for about 10-15 minutes, until cooked.

2. While quinoa is cooking, chop veggies.

3. To assemble, place quinoa in a bowl and top with veggies. Drizzle oil and lemon on top, and add spices.
