Spicy Italian Sausage with Mediterranean Vegetables

Ingredients

1 package (roughly 4) spicy Italian sausages (I use these)
1 medium red bell pepper
1 medium yellow bell pepper
5 - 6 white mushrooms
1 medium zucchini
1/2 white onion
1 small eggplant
6 - 7 sun-dried tomatoes
3 tbsp olive oil
3 cloves garlic, crushed
2 tsp dried basil
2 tsp dried oregano
salt and pepper, to taste

Directions

1. Preheat oven to 375

2. Cut up all veggies into 1" chunks

3. Place veggies and all remaining ingredients (excluding sausage) into 9 x 13 baking dish lined with aluminum foil

4. Cook for 40 minutes, stirring after 20 minutes

While veggies are cooking...

1. Cut sausages into 1" chunks

2. Cook in a bit of olive oil on the stove top (medium heat in a frying pan)

3. Add to veggies so flavours can mix (after about 10 minutes) (it's okay if they're not quite cooked through - the oven will take care of it!)
