Houston has been deluged by flooding rains these past few weeks, but hopefully things will settle down and brighten up soon. Spring is one of my favourite times of year, probably because it follows the long, cold winter, and brings with it new life and new opportunities. I love the feeling of expanding my own potential in the spring, and coming out of my cocoon, so to speak.
This week I wanted to share with you some of the foods that are in season in spring. They tend to be lighter than the root vegetables that were available throughout the winter; soups and stews will start to make way for salads and smoothies. Yum!
With the rise of globalization, we pretty much have access to whatever foods we want year-round. The benefit of buying (and eating) in season foods is that they’ll be fresher, with lots of nutrients (they probably haven’t been shipped as far, and have been grown outdoors), and you can save money! Take advantage of that and add these foods to your spring repertoire.
Apricots - My husband loves apricots! Try them fresh or in a cobbler.
Avocados - I absolutely love avocados year-round, but will be taking extra advantage of them this month. I top my eggs with them in the morning, or turn them into delicious guacamole.
Cherries - One of my favourite fruits, I love them fresh, canned, and of course, inside homemade black forest cake!
Kiwis, Mangoes, Pineapples - Yay for tropical fruits! Chop them up and eat them as a fresh fruit salad, or add them to smoothies.
Artichokes - I love them canned or turned into dip with spinach (also in season) and cheese.
Asparagus - I love to steam asparagus and then smother it in my Healthy Vegetable Dip.
Beets - Another favourite of mine, I eat canned beets as a snack or roast them and add them to salads.
Greens - Spring is the perfect time for greens! Use arugula, fiddleheads, spinach, and swiss chard in your salads this season.
Radishes - I eat them cut up with other veggies, or in a spring salad.
Scallions (green onions) - Add these as a garnish on your salmon or throw them into your next stir fry.
